A sake bar in an old Hội An house
- Open daily, 4pm to midnight
- 317 Nguyễn Duy Hiệu, Hội An
- Walk-ins welcome after four
Nostalgic, shabby chic, and quietly cool, Hèm offers an innovative take on cocktail culture.
The idea
Hèm was built around a simple belief: Vietnamese rice can become something world-class. Vietnam has made rice spirits for centuries; Hèm puts them behind a cocktail bar for the first time, alongside Vietnamese-made saké.
The house
The bar sits inside a historic Hội An house on Nguyễn Duy Hiệu, kept as it was found: layers of paint, weathered walls, vintage details. By day the courtyard belongs to Lalita's Mexican Brunch; from four in the afternoon the candles come out.
Rice, twice over
Japan turned rice into saké centuries ago and made a craft of it. Vietnam has its own rice spirit tradition, older still and rarely given the same stage. Hèm sits between the two: Vietnamese-made saké and rice spirits, shaped by cocktail craft, drawing on Vietnam's culinary traditions, local produce and a few select Japanese ingredients.
