this is Hèm.
Vietnam's first sake cocktail bar, in a candlelit heritage house.
Candlelit,
romantic quietly
cool
Cocktails built on rice
- ginger
- tea leaves
- bitter melon
- lotus seed
- rice itself
Hèm is set inside a historic Hội An house that keeps its original character intact, from layers of paint to weathered walls and vintage details. Behind the bar, Vietnamese-made saké and rice spirits meet thoughtful cocktail craft.
What goes into the glass comes from Vietnam's kitchens and markets, drawn by hand for the bar, with a few select Japanese ingredients.
rice, twice over
Hèm was built around a simple belief: Vietnamese rice can become something world-class.
Everything follows from that. Vietnamese-made saké and rice spirits sit at the centre of the list, not the side of it, and every cocktail is built to let them lead.

Come by after four
Walk-ins are welcome after four; for a held table, book ahead, especially on weekends. The room is small and candlelit, so groups over eight, ask us first.
